Guajes (Leucaena leucocephala - aka haujes, cuaje, hauxaya, guaje beans, wild tamarind) are a vegetable used in Mexican and some SE Asian cuisines - the long, flat, stiff green/brown pods of the Leucaena tree.  Inside the pods are small red or green seeds (roughly the size of pumpkin seeds) with a grassy, garlicky & slightly bitter flavor.

Guajes seeds can be extracted from the pods as you would peas.  Once extracted they are eaten raw, roasted, pureed, or dried (whole or ground) as a high protein snack, vegetable side or as an ingredient in other dishes.

People usually only eat guajes seeds. Once removed from their pods, guaje seeds can be eaten raw, fried, roasted or toasted.

How to Shuck Guajes

Enjoy guajes seeds as a snack, added to salads, used as a garnish for plates, blended with avocado & lime to make guacamole, cooked in stews (guasmole), used in green salsas or in cooked sauces (particularly moles). They are also sometimes dried, then ground for use as a seasoning.

Sometimes the outer pods are chopped and used to flavor fishes, but they are generally too woody for most applications
