This tan flour is produced by milling wild rice (Zizania aquatica) into a fine powder. It can be used as a gluten free thickener for sauces, soups, and gravies, or as a partial replacement for wheat flour in all manner of recipes. It is naturally gluten free. Wild rice is not actually a rice, but the seed of an aquatic grass. Wild rice was once a staple food for the native peoples of the upper American Midwest. It is highly nutritious, contains lysine (an essential amino acid), and has a nutty flavor.
Store wild rice flour in an air-tight container in a cool, dry, dark place.
RECIPES & TIPS
Try using wild rice flour in gluten free flour blends or to replace some of the wheat flour in pancakes, muffins, scones & cookies. It can also be used in tempura batters or as a gluten free thickener for soups, stews, sauces and gravies.
