If you want to give your food the unique appearance and a little bit of the flavor of truffles, using preserved truffle slices is an affordable way to do so.
Though they’re certainly more affordable than fresh truffles, most chefs feel that jarred truffles don’t impart much flavor. They’re usually used to add the appearance of truffles to a dish in combination with intensely flavored truffle oil or truffle salt to give the food truffle flavor and aroma.
If you're looking for an out of season truffle option that provides good flavor, a far better alternative would be frozen truffles.
Once these truffle slices have been opened, they should stored in their tin in the refrigerator. To keep them fresh longer, make sure the pieces are always covered in a layer of olive oil (within the jar) during storage.
Up to two years unopened, up to two weeks once opened.
RECIPES & TIPS
Try layering black truffle slices on top of pizza, using them to decorate risotto, or folding them into pasta. To ensure the dish has enough truffle flavor, we recommend also adding truffle salt or truffle oil.
