Job’s Tears (Coix lacryma-jobi - aka Coixseed, Chinese Pearl Barley, Adlay) are a gluten free heirloom grain originally from Asia & Africa. Looking a bit like giant barley with a teardrop shape, they have a warm, nutty, slightly sweet flavor and a creamy, slightly chalky texture when cooked.
Job’s tears are very nutritious. They’re high in carbohydrates, potassium protein, fiber, iron and calcium. Low in fat, they also offer a higher than average protein to carbohydrate ratio. Eastern medicine has long considered this ancient grain to have health and healing benefits.
RECIPES & TIPS
Job’s tears can be simmered in salted water similarly to other grains, until tender. Once cooked Job’s tears can be used as a starch side dish, in soups (as you would barley), or in grain salads. In some cultures Job’s tears are powdered & mixed with water or boiled to produce beverages.
Try pairing them with ingredients like dried fruit, mushrooms, vegetables, rice, or other grains.
