Cypress Grove Chevre has been producing American goat’s milk cheeses since 1983, when they were somewhat of a rarity. Humboldt Fog cheese is their premier ripened cheese, and can easily be identified by the edible vegetable ash that runs through it in a distinctive stripe as well as encapsulating it under the rind.

Unlike many strong flavored European goat’s milk cheeses, Humboldt Fog has a mild (but tangy) flavor. The flavor of this cheese actually changes depending on where in the wheel the cheese you’re tasting has been taken, getting stronger towards the rind.

Loosely wrap Humboldt Fog in wax paper and keep it in the fridge, but allow it to come to room temperature before serving.

Because it is a milder goat’s cheese, Humboldt Fog is best served simply so its subtle variations in flavor can be appreciated. A cheese plate with crackers and fruit (apples and pears) is the perfect place for it. However, if you do want to cook with it, consider pairing it with fresh wild mushrooms or tossing some in your next salad for a real treat.
