Sumac is a tart, astringent, fruity spice harvested from the berries of the sumac shrub (Rhus coriaria). While it’s not commonly used in Western cuisines, it plays an important role in many cultures in the Middle East as well as in some parts of India & North Africa.
Sumac is most commonly sold ground with salt, with a dark color and even consistency being hallmarks of a top quality product.
Store ground sumac in an airtight container in a cool, dry place.
RECIPES & TIPS
Use sumac to bring sourness to dishes as a finishing ingredient, marinade or rub component, or a sauce component. It can be used as an alternative to vinegar or lemon in some dishes.
Pair sumac with roasted or grilled meats (especially poultry & lamb), seafood, oregano, thyme, avocados, paprika, and vegetables like tomatoes, eggplant, zucchini, lentils, onions & beets
