Close relatives of the habanero, scotch bonnets (aka bonney peppers, Caribbean red peppers, Boabs bonnet) are sweeter & fruitier than the habanero, but still extremely spicy. They’re a quintessential component to jerk seasoning and many Caribbean dishes.

Caution: These chilies are extremely hot.

  • Wear gloves while handling chilies. Wash hands thoroughly before touching eyes & sensitive tissue.
  • If grinding, avoid inhaling powder. Eye & respiratory protection recommended.
  • In the event of inhalation, move to open air to clear lungs.
  • In the event of burning eyes, flush with eye wash. For burning skin, wash thoroughly with soap & water.
  • If irritation persists, seek medical aid.

STORAGE

Store dried scotch bonnet chilies in an airtight container in a cool, dry place.

RECIPES & TIPS

Scotch bonnet chilies are extremely hot. Use them to bring bold heat & fruity chile flavor to dishes either rehydrated before use, rehydrated by steeping in soups, stews or braises, or (carefully) chopped or ground into powder. Try using them to make homemade jerk seasoning, chop them for pepper sauces or relishes, or pureed in homemade hot sauces.
