Crystallized Whole Rose Blend

Flowers, egg white, sugar, water and food grade lacquer.
These crystallized roses have been made by brushing edible roses with egg whites and then encrusting them with a very fine even layer of sugar. They’re then dried until stiff, preserving them for months.
Crystallized roses are sold in a blend of colors. The colors in this blend can vary with availability but will include several of these: white, pink, purple, burgundy, red, yellow, orange, and multicolored. The candying process causes the roses’ natural colors to fade slightly, becoming softer and more subtle (but still very beautiful). They vary from about 1.5" to 2.5" in diameter.
The lacquer used in the production of these flowers is FDA Food Grade. It is widely used in the food, candy and confection industries as well as in the pharmaceutical industry as a pill coating. It has been approved by Kosher certifying agencies.
Store crystallized flowers in a cool, dry place.
Six months to a year.
RECIPES & TIPS
Crystallized roses can be used to garnish any dish where their added sweetness won’t conflict.
They should not be placed in beverages or directly on top of sauces, as their sugar crust will absorb moisture and dissolve.
