Candy cap mushrooms are perhaps one of the most unusual wild mushroom varieties because of their ability to work in both savory and sweet dishes. They are intensely aromatic, with a woodsy scent that evokes maple syrup or a maple bar doughnut. They have a similar (though less powerful) flavor. They are highly sought after by professional chefs as well as pastry chefs looking to create innovative desserts.
Wild candy cap mushrooms only grow in small portions of the United States. To develop their full flavor and camelize their sugars, they are expertly dried at 115 degrees with hot air. They must be carefully monitored throughout the drying process, because it's very easy to push them too far and ruin them.
Store dried mushrooms in an air-tight container or zip top bag in a cool, dry, dark cupboard.
Dried mushrooms will retain their flavor for at least a year, but likely far longer.
RECIPES & TIPS
If you want to try making candy cap desserts, try adding powdered candy caps as a seasoning, or steeping them in custard, cheese cake and ice cream bases the way you would vanilla beans. They can also be reconstituted like other dried wild mushrooms, chopped, and baked into cookies or cooked into pancakes.
