These truffle breakings (aka brisures) are pieces and chunks of real black winter truffles.
Though they’re certainly more affordable than fresh truffles, most chefs feel that preserved truffle breakings don’t impart much flavor. They’re usually used to add the appearance of truffles to a dish in combination with intensely flavored truffle oil or truffle salt to give the food truffle flavor and aroma.
If you're looking for an out of season truffle option that provides good flavor, a far better alternative would be frozen European truffles.
Store preserved black truffle breakings in a cupboard until you open them, then keep them in an air-tight container in the refrigerator.
Once opened, preserved truffles will keep in the refrigerator for up to two weeks.
