Arrowroot powder (aka arrowroot flour) is a naturally gluten free thickener made by drying and grinding the roots of the arrowroot plant (Maranta arundinacea).
Store arrowroot powder in an air-tight container in a cool, dry place.
RECIPES & TIPS
In order to prevent clumping when added to hot liquids, blend arrowroot powder with a small quantity of cool water to create a slurry (as you would cornstarch) before adding it to the sauce, soup, pudding, etc.
Once the arrowroot powder is in the mixture to be thickened, it should be cooked to 140-187˚F in order to activate its thickening power. Heating the mixture past that point may cause the now-thickened mixture to thin somewhat.
Arrowroot’s thickening power is roughly twice as powerful as the same amount of wheat flour.
