Whitefish caviar (aka golden caviar) is roe harvested from the lake whitefish, a member of the salmon family found in the American Great Lakes along with other cold freshwater lakes and a few large rivers. This roe’s small, glossy grains offer a crisp texture (similar to tobiko flying fish roe), golden color and mildly tangy, slightly sweet flavor.

Whitefish caviar can be served on blinis with cream cheese or creme fraiche as you would sturgeon caviars. However, because of its mild, slightly sweet flavor, it can also be used as a garnish for a wide variety of dishes, including pasta, soups, salads, sushi and sashimi.

If serving whitefish roe as part of a canapé or as a garnish, expect to get about twenty 1/4tsp servings from a single ounce. However, if you’re serving a caviar course to people who love it, expect to need a half to a whole ounce per person.
