Spruce tips are the bright green young shoots that grow from the end of spruce branches during the spring. They have a piney, herby, citrusy flavor and are high in vitamins A & C. They’re used as an ingredient in sweet and savory dishes as well as cocktails and other beverages.

These spruce tips are sustainably foraged in the Pacific Northwest.

Storage:

Store spruce tips in a zip top bag in our refrigerator.

Shelf Life:

Up to 10 days.

Spruce tips can be used in infusions (especially syrups) and sweet or savory purees.  These components can then be used to make glazes, sorbets, ice cream, sauces and more.  They can also be pulled apart into needles for pickling.  Some people use spruce tips in brewing beer or cider, or infusing spirits.

Spruce tips can also be dried for use in teas.
