Sylvetta Arugula (aka Wild Arugula, despite being cultivated) is a smaller, darker green, nuttier and spicier Arugula variety. Even small quantities will add considerable peppery bite to salads, fresh fruit dishes, herb crusts, oils, and sauces.
This fresh Sylvetta Arugula is referred to as a “petitegreen”. This means that it is somewhat older than a microgreen, making it larger and more impressive while offering fairly similar flavor and tenderness to a true microgreen.
Store petite sylvetta arugula in your refrigerator in its plastic clamshell.
Petitegreens will stay fresh for 10-20 days depending on the variety.
RECIPES & TIPS
As long as its stronger flavor is taken into account, sylvetta arugula can be used as you would conventional arugula in a variety of salads, sauces, pasta fillings and dishes.
Arugula’s peppery bite pairs well with strong cheeses like goat cheese & Parmigiano Reggiano, other bitter greens (particularly endives and radicchio), tomatoes, aged balsamic vinegars and full flavored peppery or fruity extra virgin olive oils.
