Oyster flowers are tiny purple or blue flowers sold on leafy stocks of oyster leaf plant. Each stalk has several leaves attached. Oyster leaves have a truly remarkable flavor that starts mildly vegetal and then suddenly tastes almost exactly like a fresh oyster. They’re a great way to surprise and delight diners. The flowers themselves are quite mild and slightly bitter, with some oyster flavor on the finish.

Store oyster flowers in their plastic clamshell in your refrigerator.
RECIPES & TIPS
Oyster flowers’ flavor (with their leaves) pairs well with seafood and can also be used in salads.
Some edible flowers may wilt or change color when exposed to vinegar, so if using a vinegar-based dressing on salads containing edible flowers, test it on a few blossoms ahead of time and/or add it at the last second.
