Serving sizes of caviar can vary wildly depending on each person’s appetite for this prized delicacy. However, we recommend 30 grams of caviar for a single serving, 50 grams for two, and 100 grams for four people.
Though there is some debate, it is widely believed that serving caviar with non-gold metal utensils (particularly silver) can cause it to oxidize and take on unpleasant metallic flavors. The traditional utensils of choice are mother of pearl spoons, with plastic (believe it or not) being a modern substitute.
