Merguez is spicy lamb sausage that originated in the North African countries of Morocco, Algeria, Libya , and Tunisia and became popular throughout the Mediterranean, the Middle East, and Western Europe. Because the originating countries are predominantly Muslim, thus prohibited from eating pork, merguez are traditionally stuffed into lamb casings, which are smaller than the pork casings used in most sausages. While our large merguez sausages use pork casings, these smaller 2oz. sausages are completely pork free, made from lamb raised on natural feed with no animal by-products.

Fabrique Delices, a company that has been carefully crafting artisanal charcuterie in California since 1985, makes these merguez sausages following traditional recipes to ensure authentic texture and flavor.
