PRODUCT INFO
Carraquette oysters are an Atlantic oyster variety from New Brunswick with a darker color due to the highly mineralized water they’re grown in. The minerals also add to their flavor, contributing a mineral finish to the usual sweet, briny, musky flavors usually found in east coast oysters. They’re quite small (1 ¾”-2 ¼”), making them an easy-to-handle option for parties.
These oysters have been stored in a high tech refrigerated flowing seawater system post-harvest that keeps them fresher, tastier, and alive longer. While in this wet holding area, they naturally clean themselves of sand, bacteria and grit by filtering the clean seawater.
STORAGE
Storage: | If you will be eating your Carraquette oysters soon after arrival, you can simply store them in a bowl in your refrigerator covered with a damp towel.
