These Kurobuta pork shoulders are "Boston Butt" style.  Despite its unusual name, this cut of pork actually comes from the front of the pig, not the back. It’s actually the upper part of the pork shoulder.

Boston butts are well marbled with flavorful fat that helps keep them moist during cooking. Best braised, smoked, or roasted, they are extremely popular in the South as a BBQ cut, and also show up often in Chinese cuisine. Using Kurobuta shoulders as a replacement for conventional pork shoulders is a great way to take your BBQ to new heights!

Kurobuta pork (aka Berkshire pork) is from a rare breed of pig that has long been bred in England and Japan for flavor and more marbled meat. The result is some of the finest pork in the world, sometimes referred to as “The Kobe Beef of Pork.”
