Gold Edamame Shoots

Gold edamame shoots have beautiful yellow-gold stems and light-green, crunchy bean-like tops. They have a more substantial texture and appearance than most shoots and a fresh bean flavor.
Edamame shoots can be used raw or very lightly cooked as a side dish, appetizer (a different take on traditional edamame), ingredient or garnish.
Store edamame shoots in your refrigerator in their plastic clamshell. Note: Extended periods of light exposure can change these shoots’ color from gold to green.

RECIPES & TIPS
Edamame shoots are tender enough to eat raw, but can also be very lightly cooked (steamed, blanched, very lightly sautéed).
Serve edamame shoots lightly sprinkled with salt for an unusual twist on the traditional edamame soy bean appetizer.
Use them as a garnish for seafood or sushi/sashimi platters, as a bed for chicken, or added to sandwiches instead of (or in addition to) sprouts or other greens.
