Wild Coho Salmon (aka Silver Salmon) are similar to King salmon in color and texture. They lack the prominent white "marbling" seen in King salmon & have a lower oil content giving them a less pronounced richness than King or Sockeye. Their meat also has a smaller flake size.
Though less highly prized than those two species, Coho is still well regarded because it offers good flavor at a lower cost.
Store fresh salmon fillets in your refrigerator. Store frozen salmon fillets in the freezer until you're planning on cooking them, then defrost & store in the refrigerator.
