Be ready for your next party in a snap with these charcuterie samplers. Two sizes are available: a three-item small sampler and a five-item large sampler. Each item in the samplers is packed in 7oz portions, ensuring there will be plenty for a party and a wide selection of options for your guests.

Of course, if you just love charcuterie, these samplers also allow you to enjoy a variety of flavors & textures in a single order.

Pates, mousses and rillettes all have different textures.  Mousses are light, soft and smooth, perfect for spreading on crackers, toast points, and other foods. Pates are firmer, and can be sliced.  Rillettes are rustic spreads made from cooked down shredded meat with a coarser texture than mousses.

Pate with Black Pepper is made with Niman Ranch pork.  All of these products have been made from duck, chicken, and pork raised antibiotic & hormone free and fed natural feed (no animal by-products).

Fabrique Delices has been carefully crafting artisanal charcuterie for over 24 years. They follow traditional recipes in order to ensure authentic texture and flavor.

Pork Rillettes

Ingredients:

Pate with Black Pepper:
Pork, pork liver, egg, cornstarch, onion, nonfat dry milk, salt, red wine, black pepper, garlic, spices.

Duck Mousse with Port Wine: Duck liver, duck fat, milk, fresh egg, Port wine, cornstarch, salt, sugar, hydrolysed corn, soy and wheat proteins, pepper, spices. Aspic: water, gelatin, vinegar, Cognac, salt, hydrolysed corn, soy and wheat proteins.

Truffle Mousse: Chicken liver, duck fat, chicken fat, milk, whole egg, Sherry wine, cornstarch, truffle, mushroom, sugar, salt, porcini mushroom powder, onion, white pepper. Aspic: water, gelatin, vinegar, Cognac, salt, hydrolysed corn, soy and wheat proteins.

Duck Rillettes du Perigord: Duck meat, duck fat, water, duck liver, cornstarch, salt, pepper, spices.

Pork Rillettes:
Pork, pork liver, water, cornstarch, salt, black pepper, spices.

STORAGE

Storage:

Store pates, mousses & rillettes in your refrigerator. For long term storage they can be frozen, though this may change their texture.

Shelf Life:

Unopened packages will stay fresh for up to 8 weeks. Once opened, pates & mousses will last 10-14 days, while rillettes will last up to 14 days. All products can also be frozen for up to 36 weeks.

RECIPES & TIPS

Pate:

Pates are most commonly served cold or at room temperature with toast or crackers as a canapé or hors d’oeuvre. However, they can also be enjoyed as a sandwich filling.

Mousse:

Mousses’ smooth, spreadable texture is ideal for serving cold or at room temperature with crackers or toast. However, they could also be used as a (rich) condiment or spread for sandwiches.

Rillettes:

Rillets are traditionally served cold, spread on crackers or bread, as an appetizer or hors d’oeuvre. Their texture is too soft for slicing.

Traditional charcuterie accompaniments include cornichon or gherkin pickles, olives, and coarsely ground French-style mustards.
