Connecticut Blue Point oysters have been an iconic Atlantic oyster variety for ages. These oysters are farmed in the Long Island Sound without the use of cages or traps. They are harvested between 3” and 4” in size and have a briny, meaty flavor with a bit of Atlantic muskiness.
These oysters have been stored in a high tech refrigerated flowing seawater system post-harvest that keeps them fresher, tastier, and alive longer. While in this wet holding area, they naturally clean themselves of sand, bacteria and grit by filtering the clean seawater.
