Tender & delicious, these snails offer a cleaner earthy-musky flavor and texture to canned snails. They are parcooked & shelled, ready to briefly saute in butter until heated through, or otherwise prepare according to your recipe.
These snails are the petit gris variety (aka little gray snail, Cornu aspersum/Helix aspersa) which is smaller & more tender than the gros gris/big gray snails commonly sold in cans. Between the species and the absence of the canning process, these snails are significantly more tender than most escargot on the market.
They are raised free range on open pasture on a snail ranch/snailery (escargotière) in Quilcene, WA – which occupies nearly the exact latitude of the premium French snail farming region of Burgundy, France. They’re fed a diet of organic-based feeds, purpose-grown vegetables (broccoli & clover) and herbs (like basil).
Snails are a healthy, high protein, low fat food.
Store frozen snails in your freezer until you need them, then thaw.

RECIPES & TIPS
These escargots can be prepared similarly to canned snails, but will provide more tender & tastier results. Simply thaw, then lightly saute in butter (with garlic, white wine & parsley if desired) before serving. They can also be lightly cooked in a variety of other appetizer & entrée applications, from pizza to crostini.
