Le Québécois Veal Stew Meat is composed of cubed neck and shoulder pieces, very flavorful cuts that are less tender than other parts of the animal. The meat is best braised.

Grain-fed veal is not the same as ‘pale veal.’ Its natural rose color comes from a varied, nutritious diet, including grains, which give the meat a more robust flavor for two reasons: First, grains give the meat subtle marbling that infuses the meat with flavor and tenderness that veal is known for. Second, grain-fed veal contains more iron and other minerals which add to the delicious flavor and the animal’s health.

Store frozen meats in your freezer until you’re ready to use it, then thaw only as much as you plan on cooking.

Thawing Tips

Veal is a lean meat that cooks quickly when braised. For a lighter stew use water, wine, broth -- or a combination -- as a braising liquid, and add spring onions, fresh herbs and peas. Braise with tomatoes, lemon, garlic, and rosemary for an Italian-style stew, or with leeks, mushrooms and cream for a rich, hearty winter dish.
