Arctic Char (aka Char or Charr) are a smaller relative of salmon and trout.  Char have red/pink flesh with a small flake and meaty texture that turns white when cooked. Their fat content and flavor are between salmon and trout, so if you consider salmon too rich or trout a little bland, char may be the fish for you!

Freezing Tips.

Arctic char fillets can be grilled, broiled, baked, or smoked.  Their skin is generally not served, but can be left on during cooking to help the fish hold together when grilling or broiling.

Arctic char can be paired with both salmon and trout friendly flavors as long as its flavor relative to those fish (stronger than trout, weaker than salmon) is taken into account.  Common choices include lemon, butter, chervil, tarragon, white wine, ginger, pasta, rice (especially wild rice) and mushrooms (especially lobster mushrooms or shiitake mushrooms).
