Developed as a way to preserve fish for later use, smoking is a great way to add flavor. Our bulk wild smoked salmon is intensely flavorful, sustainably fished, and higher quality than smoked salmon offered in most grocery stores.
The same small family-run fishing boats catch & produce our cold-smoked salmon lox and salmon jerky in several varieties. Most salmon lox is made with farmed Atlantic salmon, but all our varieties are wild Pacific salmon lox, offering superior flavor and environmental sustainability.
We also offer Mojama (salt-cured tuna), a Spanish delicacy, and Boquerones - a style of anchovy prized by chefs for their clear, less fishy flavor.
