Pheasants

Pheasants are elegant, delicious birds with tender meat that is lean yet succulent. They have been a prime poultry choice for fine banquets and royalty since being introduced to Europe from China in the middle ages.  Whole raw pheasants are excellent roasting birds, and are also available smoked.  Airline pheasant breasts can be cooked similarly to other poultry breasts.
