Guinea Fowl

From the same family of birds as pheasants and turkeys, guinea fowl, like pheasants, are a smaller game bird option weighing in at 2.5 to 3 pounds. Mostly dark meat, guinea fowl is very lean and tender with a flavor similar to pheasant or duck.
