Pork can be so much more than what you’re used to buying from the grocery store.
Wild boar is humanely trapped in the forests of Texas hill country, where it is a highly damaging invasive species. Because of their wild diet, meat from feral pigs has a rich, nutty flavor, a dark red color, and tight grain while also being very lean.
Mangalitsa pork and Kurobuta pork (aka Berkshire pork) are the cure for the common pork chop. Most American pig farmers have recently focused on breeding the fat (and consequently moisture & flavor) out of the common pig, but these breeds have kept their rich marbling.
