Gnocchi are small rustic Italian potato dumplings that are cooked and consumed like pasta. Potato gnocchi date back to about 1860 in Italy, but versions made with wheat flour or mashed pumpkin are actually far older. They are beloved for their cloud like shape, pillowy texture, and ability to pair well with both tomato and cream sauces (particularly gorgonzola sauce).
