Bay Scallops & Sea Scallops

Light, fluffy, tender and sweet, scallops are an elegant shellfish popular in fine dining restaurants. Sea Scallops are impressive on the plate and the restaurant standard, while Bay Scallops are even more tender and sweeter, but much smaller.
Most people only eat the white adductor muscle, but for some people roe-on scallops, which have the bright orange roe sack still attached, are considered a delicacy. |
