The Origin of Sausage Meat

If anything unites the world, it’s sausages. Every country in the world has its signature sausage, sometimes several. Sausage making goes so far back in time, it’s hard to say who first came up with the idea, but scholars have traced the first mention of meat stuffed into casings to Mesopotamia some 4,000 years ago.

Essentially, sausage was born as the solution to a problem. Once humans started hunting large animals for food, their challenge was how to use or preserve all the meat before it could spoil. They hit on the idea of filling the innards– usually the cleaned intestines or stomach—with random bits and pieces of meat and fat, which they then preserved with salt and smoke.

Sausage-making remains key for chefs and artisanal butchers who practice whole-animal butchery today. It’s still a way of ensuring nothing goes to waste, plus, when combining seasonings and ingredients for sausage meat, the scope for imagination is boundless. A good example is our 12-variety sausage sampler.

Sausages can be made with just about any meat. At Marx Foods, our bulk sausage options include pork sausages, lamb sausages, game sausages like bison and elk, and even alligator and ostrich meat. If you’re looking to buy sausage wholesale, Marx Foods is the place.

Bulk Sausage Comes in Many Styles

Bewildered about sausage styles? We get it. There are so many choices. Fresh or cooked? Cured or uncured? Smoked or not? Here’s a short guide to help you sort it all out.

Fresh sausages are made from meats that are not cured or smoked, so they must be cooked before serving:

Examples: Mexican-Style Chorizo Sausage, Bratwurst, Sweet Italian Wild Boar Sauasage.

Cooked sausages:

are made with uncured meats that have been cooked but not smoked. Examples: Boudin Blanc, Boudin Noir, Kurobuta Hot Dogs.

Cooked smoked sausages:

are made from cured meats that are lightly smoked and fully cooked. They only need to be heated before eating, if desired. Examples: Smoked Alligator Sausage, Alligator Andouille.

Uncooked smoked sausages:

are made from either cured or uncured meats, then smoked. They should be cooked before serving. Examples: linguica, Polish Sausage.

Dry sausages:

are cured and air-dried under controlled conditions. They may or may not be smoked. Examples: Saucisson Sec, Spanish chorizo.

Wholesale Sausages: FAQs

There are thousands of sausage varieties in the world. Everyone has a favorite sausage. “The Taste Atlas” compiled a list of the 50 most popular sausages in the world. These are their top 10: Chorizo (Spain), Bratwurst (Nuremburg, Germany), Weisswurst (Munich, Germany), Salsiccia (Italy), Black Pudding (England), Alheira (Portugal), Leberwurst (Germany), Sucuk (Turkey), Blutwurst (Germany), and Botifarra (Catalonia, Spain).

The better the meat, the better the sausage. But the right cut of meat is also important. Shoulder and belly meat typically have enough fat and connective tissue to provide the best flavor. Also, a good sausage should not be too finely ground or dense. Blending the ideal ratio of meat, fat and spices requires skill too. Buying sausage from an artisanal purveyor or a supplier able to provide this information helps assure you are buying good quality sausage meat.

Natural casings made from the intestines of animals have been traditionally used to encase sausage meat for millennia. High-quality sausages will have a natural casing. It looks better and it’s permeable, allowing smoke and cooking flavors to infuse the meat. Artificial casings are also available. Collagen casings are produced from animal hides and are edible. Cellulose casings, made of viscose, are permeable so flavor can pass through during cooking, but not edible. Plastic casings are impermeable and inedible, and typically used for non-smoked, high-volume sausage production.
