Edible Roots & Rhizomes

Edible roots and rhizomes offer far more culinary possibilities than simple potatoes, sweet potatoes or yams. 
 
Try real wasabi for a more complex flavor than pre-made pastes, add fresh horseradish to homemade cocktail sauces, prime rib dinners, and bloody marys.  Taro and lotus roots make fantastic potato chip alternatives, and sunchokes are pureed favorite in fine dining restaurants.
