Largely underappreciated in today’s world (and therefore much more affordable than other cuts), offal and bones play very important roles in a lot of traditional and ethnic recipes. Mixed veal bones are used in the production of brown and white veal stock, and veal marrow bones can either be used to add richness to stock or their marrow can be extracted and served.
