Game Meats are a Healthy Alternative to Conventional Meats...

And Tasty too!

 

In a culture where we keep hearing that we need to cuts back on fatty meats and cholesterol, what is a meat-lover to do? Game meats are becoming a very popular alternative. Most game meats have less fat and cholesterol than conventional beef and poultry.

 

Here are some examples:

 

Ostrich: Technically poultry, ostrich meat has the flavor, color and texture similar to a prime cut of beef. It can be substituted for beef in nearly any recipe. With a sweet, rich flavor ostrich is surprisingly very low in fat and cholesterol (even lower than skinless chicken).

 

Wild Boar: With a diet consisting mainly of foraged nuts, wild boar has a slightly sweet and nutty flavor with a tender texture. This wild boar is truly wild being humanely trapped in Texas Hill Country. Wild boar is a lean and healthy alternative to pork and can be substituted for pork in nearly any recipe.

 

Alligator: A popular meat in Cajun cooking, alligator is extremely high in protein and low in cholesterol. Because of its high water content, alligator is best sautéed and goes really well in gumbo or jambalaya.

 

Kangaroo: Kangaroo loin meat is ruby-like red and has a fine textured soft meat with tender muscle fibers. It is full-bodied in flavor with similarities to venison. Kangaroo is a quality alternative red meat because like most game meats, kangaroo is low in fat and cholesterol and high in protein.

Venison: From humanely raised, free-range venison, tenderloin is low in fat and cholesterol, but maintains important vitamins, mineral and omega 3 levels. A great recipe substitute for beef, venison has a robust, non-gamey flavor.
