Modica Chocolate: Modica-style chocolate was developed in Italy from techniques brought back from the New World by Spanish explorers. It is far less processed than most other chocolate, heated just enough to be pressed into bars. It has a unique crunchy texture, rustic appearance, and a robust, full chocolate flavor. I Boeri Cherries: These chocolates are made by first soaking whole (unpitted) Italian Vignola in grappa for over a month. They are then coated in a sugar shell and dipped them in dark, milk or white chocolate. A decadent treat. |
