Pacific Snapper (also known as Rockfish) has firm flakes and a mild taste. It also tends to have a very high oil content, which makes them very popular in Japan.
Season: Rockfish is generally available year round, but because Rockfish takes an extremely long time to mature, harvesting trips are only made once a month.
Origin: They are primarily caught in the coasts of Alaska, Canada, Washington, and Oregon, depending on the season.
