Ostrich is the solution to this problem. Though it has a flavor and texture similar to beef, it is very lean and low in cholesterol like other poultry. It is also high in heart-healthy iron.

Not only do the chunks of pistachio that stud these sausages give them a nutty flavor, but pistachios themselves may also have heart-healthy properties according to the USDA.

These sausages have been smoked to add extra flavor, but are only lightly spiced so you can enjoy the taste of the ostrich and the nuttiness of the pistachios.

Applications: These ostrich sausages would make a great game sausage sandwich, or can be substituted for conventional sausage in most other recipes involving smoked sausage.

How to Store and Share: These 1/4th lb smoked ostrich sausages are packaged in four 10-link packs within the case, allowing you to thaw only ten at a time. They should be kept frozen for long term storage, then thawed prior to cooking. For thawing instructions, please read Safely Defrosting Food for Maximum Flavor. Please do not thaw and refreeze your sausages.
