Picked from big leaf maple trees, these small yellow blossoms grow in clusters. Their sweet floral flavor faintly evokes green tea and maple syrup.
Applications: Use maple blossoms to add flavor to fritters and herbal tea infusions. They can also be sautéed (though this can make them bitter) or eaten raw.
Season: Late March through early June.
Origin: Hand foraged in Pacific Northwest forests.
