Usually only available dried or ground, fresh ghost chilies are extremely hard to find in the US. They can be chopped or sliced just like any other fresh chile without rehydration. Famous as one of the very hottest chilies, they will bring extreme heat to any dish.

Although this variety is incredibly spicy, it also possesses a slight surprising sweetness and smokiness behind all that heat. The perfect gift for the hardcore chilehead in your life, this pepper is only reserved for those who wish to add true fire to their dishes.

Store fresh ghost chilies in their clamshells in your refrigerator.

Add a little to fresh salsa, sauces, chili and anything else you want to start a 12 alarm fire with. 

Before cooking with them, fresh ghost chili peppers should be de-stemmed and generally have their seeds and inner ribs removed. If pureeing, you can leave the ribs and possibly the seeds in, just be aware that this is where a lot of the capsaicin is stored, so they will be much hotter.

Once prepped, fresh ghost chilies can be used as you would any other fresh chili pepper in any dish. Just wear cloves while handling them and remember that they are extremely hot, so use them sparingly!
