Oyster mushrooms (aka shimeji mushrooms, oyster caps, pleurotte mushrooms) range in color from dark gray to pale brown with white or pale grey gills under their caps. They have a somewhat peppery flavor that gets milder when cooked and a somewhat crunchy texture.
Dried oyster mushrooms store well in your pantry, ensuring that you always have mushrooms at hand when you want them. They can be easily rehydrated by submerging them in boiling water. Extremely adaptable, they can also be used to add volume to mushroom dishes getting their flavor from more powerful wild mushrooms.
