Maitake mushrooms are also known as 'Hen of the Woods'. They do not have caps, and grow in clusters at the foot of oak trees. Maitakes are a cluster of dark fronds with firm and supple texture at its base, becoming slightly brittle and crumbly at the edges. They have a mild aroma.

Applications: They are quite meaty, with a nutty flavor, and these mushrooms can hold their shape and crisp texture extremely well in the sauté pan.
How to Reconstitute Dried Mushrooms.
Storage and Handling: Dried wild mushrooms can be stored away from light at room temperature for at least a year in airtight plastic bags, jars or other containers. Dried mushrooms do not need to be refrigerated.
