Crimini mushrooms (aka baby bellas, Roman mushrooms, cremino mushrooms, brown mushrooms) are a fairly mild and very adaptable mushroom variety.  When fresh, their taste and texture are similar to button mushrooms, but a little bit firmer and a little bit stronger flavored.

Criminis' more mild flavor also makes them a great choice for people who are just starting to appreciate mushrooms for the first time and aren’t ready to try more potent varieties like shitakes, morels and porcinis.

Crimini mushrooms are a rare vegetable source of natural Conjugated Linoleic Acid (CLA), a substance that studies suggest may have anti-cancer abilities in addition to other health benefits.

Dried criminis are easy to store until you need them, ensuring you always have mushrooms at hand.  They’re easy to reconstitute and a variety that won’t overpower other ingredients. 

Dried mushrooms are a great value. It takes about 5 pounds of fresh mushrooms to create 8 ounces of dried mushrooms. They can be shipped more affordably and last a year or longer in your pantry.

Storage: Store dried crimini mushrooms in an air-tight container or zip top bag in a cool, dry, dark cupboard.

Shelf Life: Dried mushrooms will retain their flavor for at least a year, but likely far longer.

Once reconstituted, crimini mushrooms can be consumed raw or cooked.  They can be used in almost any mushroom recipe, particularly as a substitute for button mushrooms in almost any recipe.

Use them in soups, on pizzas, in stews or salads. Sauté them with butter and garlic for use as a side dish, pizza topping. Finely mince them and cook them with butter, white wine and cream to make duxelles, a great stuffing for fish roulades, meat, or addition to beef wellington (how to make duxelles).
