Yuzu Kosho (aka yuzugosho) is a Japanese seasoning paste made by blending together yuzu fruit zest, chile peppers and salt. This variety also includes kombu seaweed for extra umami.
Red Kosho’s flavor is citrusy, salty, fruity (chile) and slightly spicy with umami. Green Kosho has similar base flavors, but is much spicier.
Kosho paste is extremely potent, so a little will go a long way (many recipes use a teaspoon at most), ensuring that even these small jars will provide flavor for a lot of dishes.

Storage: Store unopened yuzu kosho in a cool, dry cupboard. Once opened it should be stored in your refrigerator.
Shelf Life: Up to six months.
Kosho paste can be added to finish dishes in tiny amounts as a condiment or mixed into broths, soups, stews, rubs, marinades and salad dressings as an ingredient. It is quite concentrated, so you only need a little (generally a teaspoon at most) to bring a lot of flavor to your food.
