artisanal expertise necessary to reintroduce the germ without
compromising quality or shelf life, hanging their pasta by hand to slow
dry in cool air over the course of 36 hours.
The resulting pasta possesses a richer, fuller version of top
quality pasta’s usual aroma and flavor, reminding the diner that the
noodles themselves can have a soul beyond what they are served with.
