Wild King salmon (aka Chinook or Tyee Salmon) is the largest of the five species of Pacific salmon. King salmon deserves its royal title because of its large flake size, firm, pink-orange flesh, and rich flavor (it has the highest oil content of all salmon species). King and sockeye salmon are the varieties most highly prized by chefs (and are thus the most expensive).

Store fresh king salmon in the coldest part of your refrigerator. They can be frozen for long term storage.

Store frozen king salmon in your freezer, then thaw them fully before cooking.
