This Kobe beef is from Waygu (meaning "Beef of Japan") cattle that are descendants from Japanese herds and raised in Australia. Their intricately marbled beef is legendary and the result of careful breeding and a highly regimented diet. That marbling creates beef that is the most tender, juicy, and flavorful available.
Kobe Beef Frankfurters are also available if you’d prefer pre-made wagyu sausages.
RECIPES & TIPS
Grind this trim thawed but cold using a meat grinder or attachment on your mixer. Mix with complimentary flavors of your choice and either use as sausage patties or pack the sausage into sausage casings to make links.
Some flavors to consider when making wagyu beef sausages include Madeira, black peppercorns, horseradish, bell peppers, chilies, mustard and/or beer.
