Wagyu beef (aka Kobe beef) is well known for its buttery marbling of fat, tender texture and intense beefy flavor.
Using Kobe beef trim is a great way to take your homemade beef sausages to the next level because it allows you to get the flavor benefits of wagyu meat in an affordable form that is easily ground.
This Kobe beef is from Waygu (meaning "Beef of Japan") cattle that are descendents from Japanese herds and raised in Australia. Their intricately marbled beef is legendary and the result of careful breeding and a highly regimented diet. That marbling creates beef that is the most tender, juicy, and flavorful available.

Keep trim frozen until you're ready to use it, then thaw the entire block. We recommend using it to make a bunch of game sausages at once. Once turned into bulk sausage or sausage links it can be refrozen.

Grind this trim thawed but cold using a meat grinder or attachment on your mixer. Mix with complimentary flavors of your choice and either use as sausage patties or pack the sausage into sausage casings to make links.
