Turbinado Sugar

Turbinado sugar (aka turbinated sugar) is made by evaporating sugar cane syrup and then spinning the resulting crystals in a turbine to dry them out. It is a very light brown color, and in fact can be used as a brown sugar substitute. However, it is much easier to measure than brown sugar as it is less moist and does not clump.

Demerara Sugar is produced in a similar fashion, but is darker with hints of molasses flavor and significantly larger crystals.

Applications: Turbinado sugar can be used as you would brown sugar in most recipes. It can also be dissolved in hot or cold drinks and used to make simple syrup to sweeten drinks, sorbets, or cakes. Try using turbinated sugar to top crème brulee instead of conventional sugar.
