Harvested from pink freshwater trout caught in some of France’s smaller inland lakes, trout roe has a medium-large egg size and is a bright translucent pink with a tiny orange “eye” in the center. Firm in texture, it has a bold flavor and noticeable popping sensation in the mouth (similar to ikura salmon roe).
Storage: Store trout roe in your refrigerator. It can be frozen for long term storage.
Shelf Life: Up to two weeks fresh, six months frozen.
Because pink trout roe often has a slightly sticky texture, it is best used in dips or mixed with a little crème fraiche on canapés. However, its large size and striking color do make it a good choice for certain garnishes too, where only a few eggs are necessary to draw the eye.
